Our next San Miguel wine-pairing dinner will focus on some of Japan’s most celebrated dishes. Guest chef Satoru Takeda will join Chikatana chef Alejandra Landeros in creating four courses paired with local Mexican wines.

Yakigyoza
Boiled and roasted gyoza noodles stuffed with vegetables, beef, pork and chicken
Palomas Brut, Queretaro, Mexico

Chikaume Salad
A mix of greens accompanied by cucumber, blueberries, red plums and almonds with a sweet and sour plum and tamarind vinaigrette
Dos Secretos Rose, Queretaro, Mexico

Tonkotsu Ramen
Concentrated pork bone broth accompanied by kikurage mushroom, char sui pork, soy, egg, pickled ginger, chives and sesame seeds
Indomable 57 Gran Reserva Merlot, Queretaro, Mexico

Matcha Roll
Green tea cake from Kyoto stuffed with homemade asuki paste and accompanied by sweet cream.
