Mi Bistro 300 has fast become one of my favorite San Miguel restaurants. What they do with fish is one of the biggest reasons why. Many of their seafood plates have the composition, quality and taste that I’m used to experiencing only when created by Japanese masters.

In January, the restaurant served what I consider the world’s finest fish. A bluefin tuna was presented in nine different and imaginative ways including (for those desperately seeking good sushi) maki, nigiri and sashimi. The six of us who were there still talk about it. Often. The only thing missing on that night was customers. Many of the chairs were empty.

If you care about endangered species as much as I do, you should know that, to the best of my knowledge, the farm in Ensanada supplying the bluefin not only responsibly practices aquaculture but were recently involved in releasing 156 tons of bluefin into the Pacific to help replenish the diminishing supply.

Next Wednesday, April 5, there will be a repeat performance at Mi Bistro 300. The restaurant will again be bringing in a bluefin tuna and again there will be a special menu on that evening. As you may know, bluefin is one of the world’s most expensive foods, so the evening won’t be cheap but it will be, in my opinion, extremely reasonable compared to what I’ve paid for bluefin at other restaurants. To reasonably enjoy a sampling of the dishes (and most are sized so that they can be shared) I would budget 500 pesos a person. If you’ll be drinking a crisp Sauvignon Blanc with the tuna as I will, that number could, of course, double.
